Traditional Mayoff Day Chocolate Peanutbutter Chip Cookies
May actually be eaten at any time of the year, but if you
only cook for
special occasions, this is the appropriate time!
1 1/2 cups butter or margarine, softened
2 cups sugar
2 eggs
2 tsp vanilla extract
2 cups flour
3/4 cup cocoa
1 tsp baking soda
1/2 tsp salt
1 2/3 cups (10 oz pkg) Reese's Peanut Butter Chips
Heat oven to 350 F. In large mixer bowl, beat butter and
sugar until
light and fluffy. Add eggs and vanilla; beat well. Stir together
flour, cocoa, baking soda, and salt; gradually blend into butter
mixture. Stir in chips. Drop by rounded teaspoonfuls onto ungreased
cookie sheet. Bake 8-9 minutes (do not overbake; cookies will
be soft.
they will puff while baking and flatten while cooling). Cool slightly
(one minute); remove from cookie sheet to wire rack. Cool completely.
Makes about 4 1/2 dozen large cookies, or about 9 dozen average-sized
ones. I make the small ones because they stay softer longer.
